Ensure that "Edit Mode" is enabled, then click the ellipsis "..." on the title header that you'd like to customize and click Edit.

Now in edit mode, you can change the display text of the title via the Edit Widget menu on the right.

You can also change the appearance and style of the title widget by clicking Display on the Edit Widget menu. When finished making changes, click Save.
